When Christian Jensen first tasted the vintage gins from London's lost distilleries, he began a journey. The recipe uses a greater number of botanicals than the London Dry with the emphasis on the lower spice and root notes. Before he left Japan the bar-owner gifted him bottle explaining that it was a brand that wasn’t made anymore. However, Chris Jensen is celebrating the more decadent side of this historic spirit, by recreating a traditional London Gin at his distillery in the heart of Bermondsey. We were hosted by Helga who was lovely and really knowledgeable and made the whole experience a lot of fun!Jensen’s has been designed to replicate the old-style London gins from the heyday of the gin cocktail and is one of the only small-batch London Dry gins actually produced in London. Further investigation led Christian to discover that Old Tom gins were rarely sweetened at the distillery but rather drinking establishments would often 'stretch' the gin further by adding water, sugar and extra spices to beef up barrels of gin.

Jensen’s gin epitomises the passion that goes into making gin and how it came to be is a fascinating story in itself! The floral notes are particularly pronounced in this gin, giving it a smooth and refreshing taste that is perfect for sipping straight or using in a variety of gin cocktails. It was while working in Tokyo in 2000 that Christian realised the supply of good-quality gin was decreasing. Obviously there was a considerable amount of tasting done so make sure you have something to eat first!I can't recommend enough, perfect for if your interested in Gin, history of gin, just history in general or you just like a good drink! It most definitely has all the usual suspects in terms of botanicals that you find in a London dry gin. I taste a mix of juniper, obviously, but not overwhelming, nice earthy tones, perfect amount of spice ‘liquorice’, floral and potentially lemon citrus, and coriander. Jensen's Bermondsey Gin harks back to the mid-20th century and the quality gins produced before the '80s and '90s, where some say the spirit languished somewhat. Booked as a surprise birthday present for a fellow gin lover, an interesting and fun couple of hours learning about the history of London gin and trying very tasty samples. This means Jensen's does not include cucumber, rose, grains of paradise or any of the other ‘contemporary’ botanicals. I prefer my Jensen Bermondsey Gin martini served 5:1 with a lemon twist, but the softness of the botanicals suit nearly any style from the Churchill Martini (it’s just chilled gin folks) to the trendy Very Dirty Martini with copious amount of olive brine. Our Old Tom recipe came about from Christian's find of a distillers handbook dating back to the 1840s with a handwritten recipe for an Old Tom.
